Roquefort Butter

Ingredients
- 1 pound unsalted butter -- softened
- 8 ounces Roquefort cheese
- 1 tablespoon lemon juice -- optional
- 1 large shallot -- minced
- 1 teaspoon black pepper -- ground
Mix all ingredients into softened butter until well incorporated,
apportion into rolls of desired size, and refrigerate or freeze.
This butter is outstanding incorporated into sauces or just melted
right on top of grilled meats, like the DAKOTA Organic Top Sirloin
or NY Strip Steak.
